The secret to its authenticity? Owner Siyin Chen, a Canton-born, Vietnam-raised culinary storyteller who has recreated the soul of Vietnam’s vibrant street food scene right here in Hangzhou.
A Slice of Saigon, Reimagined

Step inside the snug, retro-chic space, where weathered walls adorned with handwoven crafts and vivid murals evoke the bustling alleys of Vietnam. With just a handful of tables, the intimate setup feels like a well-kept secret—one that’s earned a loyal following among Hangzhou’s Vietnamese community. On weekends, you’ll spot 2-3 tables of Vietnamese patrons, some trekking 20 metro stops just for a taste of home.

“I’m not here to fuse Southeast Asian flavors—I want to keep it purely Vietnamese,” asserts Chen, whose childhood in Vietnam fuels her mission to spotlight her adoptive homeland’s cuisine. True to her word, fish sauce—the umami backbone of Vietnamese cooking—stars in every dish, even inspiring the restaurant’s name.

Two years in, Co Mam remains a shrine to Vietnam-style street eats, with rice bowls as its cornerstone. But this April, Chen plans to launch a second outlet dedicated to pho, proving her commitment to perfecting each dish.
A Menu That Whispers ‘Saigon’
The chalkboard-scrawled menu invites exploration. Start with the Vietnamese coffee, served theatrically with a dripping metal phin filter. As rich, dark brew mingles with sweet condensed milk over ice, Chen explains, “In Saigon, where it’s summer year-round, locals down 2-3 cups daily.” The result? A velvety balance of bitter and sweet—approachable even for non-espresso lovers.

Next, the fresh rice paper rolls burst with mint, basil, shrimp, and vermicelli, their delicate crunch uplifted by a peanuty dipping sauce. “We wrap them fresh daily—the shrimp are never frozen,” Chen notes.
For mains, the grilled pork chop rice delivers crackling-edged meat marinated in fish sauce, served over fragrant jasmine rice slicked with scallion oil. Paired with a slice of savory steamed egg custard (stuffed with minced pork and salted yolk), it’s a dish so beloved in Vietnam.
